Recipe: Skinny Mediterranean “Pasta”
I’ve just gotten into cooking {better late than never} and have been trying out recipes that are easy, healthy and delicious. So far this skinny Mediterranean “pasta” dish from Peace Love Shea has been a fast favorite, and I can’t wait to make it again {and actually let my friends try it this time}.
I made a few adjustments to the ingredients to make it even easier and super flavorful. All of the following {minus the spaghetti squash, which I finally tracked down at Bristol Farms} can be purchased at Trader Joe’s:
1 large spaghetti squash
1 med zucchini squash
1 pepper
1 container of chopped onions with minced garlic
pico de gallo (add to taste)
crumbled feta cheese with Mediterranean herbs (add to taste)
lemon juice (add to taste)
olive tapenade (add to taste)
To make the recipe even easier {and faster}, I cooked the spaghetti squash in the microwave. I sauteed all the fresh veggies, and then mixed everything together. So simple, and unbelievably tasty!
